Goji Berry Truffles

We came across this simply divine recipe for not-too-sweet, rich, decadent (but healthy!) truffles from our instagram friend Swedebutterfly. So all the credit is going straight to this lovely lady! I made a few slight adjustments: I added a bit of maca powder for an energy boost and hint of mellow vanilla flavor, and sprinkled a few with cardamom.

Goji Berry Truffels

2 dl raw almonds, soaked
8 tbsp goji berries
8 tbsp sunflower seeds
8 tbsp blueberry juice
2 tbsp maca powder
100 g dark, vegan, raw chocolate

chili flakes
ground cardamom

Soak goji berries in blueberry juice for about 30-45 minutes.
Mix berries in a processor with the strained almonds and sunflower seeds, adding more blueberry juice if it’s not smooth and creamy enough. Mix in maca powder. Refrigerate dough for about an hour.
