Chocolate whoopie pies with marshmallow filling

My first attempt at making whoopie pies… I was very surprised, half way between a cookie and a cake, dense in texture with a light sweet marshmallow fluff filling, classic s’more flavours in a whoopie pie. The Hummingbird Bakery recipe works well, and if you have never made them before don’t be put off by the raw texture of the batter, it’s very thick and sticky but my goodness it makes a good cake!

1 large egg
150g caster sugar
125g plain yogurt
25ml whole milk
1/4 tsp vanilla essence
75g unsalted butter melted
200g plain flour
80g cocoa powder sifted
3/4tsp bicarbonate of soda
1/4 tsp baking powder

For the filling
170g softened unsalted butter
280g icing sugar sifted
220g vanilla marshmallow fluff
